Our single vineyard red wine grapes are planted on 2 acres of rocky ground and left to ripen in most years for a mid October harvest. The blend is predominantly Merlot, with Cabernet Sauvignon added for additional character.
The Merlot variety is particularly well suited to our region, as we are able to generate very ripe character. Hand picked, gently crushed and left to cold soak prior to fermentation in small vats. Specially selected yeasts are used to enhance varietal characteristics, and ensure a sound fermentation.
After generally 2 to 3 weeks of fermentation on the skins, we press, allow the wine to naturally settle, then store in barrels for a period of 18 to 24 months. Most of the barrels in our cellar are French Oak, with a mixture of new and older barrels to obtain a wine with an attractive bouquet and balanced flavour.
The wine is not filtered, but may be fined to remove any excess tannin or suspended particles. As the wine ages in bottle, it may develop a small deposit so we recommend decanting prior to serving.
