We have 2 blocks of Pinot Gris covering two acres of our property. These may be picked at different times to obtain desired maturity characteristics. Our goal is to produce wine with concentrated varietal characteristics, with sufficient acidity to provide a fresh, clean finish.
Hand picking ensures that only sound, mature fruit finds its way to the crusher. Following crush, the grapes are generally left to cold soak on the skins for a period to extract aroma and flavour. The resulting juice often has a pink hue, depending on the time spent on skins.
Following pressing, the must is fermented under temperature control in stainless tanks to preserve bouquet and fruit flavours. A portion may be barrel fermented, usually in new French Oak, to add another dimension to it's bouquet and flavour.
Ready to enjoy in the year following harvest, our style of wine matures well for at least 1 to 2 years.
