Summer was cooler than we would have liked, so to ensure full ripeness we thinned the crop 50%. We were rewarded at harvest with rich, ripe fruit character and balanced acidity. All fruit is picked by hand. Following removal of stems, and gentle crush, the juice was left in contact with the skins to enhance varietal character. Fermentation at cool temperatures is done to preserve aromatic character. Fresh and clean with crisp apple and ripe pear character, this vintage was fermented dry. Pair with seafood, poultry and mild cheese.
“The wine presents in the glass with a very slight and appealing blush. It has aromas of citrus and apples, leading to an abundance of fruit flavours including peach, pear and apple. 90.” John Schreiner June 2021 – johnschreiner.blogspot.com.
