Summer was cooler than we would have liked, so to ensure full ripeness we thinned the crop 50%. We were rewarded at harvest with rich, ripe fruit character and balanced acidity. All fruit is picked by hand. Following removal of stems, and gentle crush, the juice was left in contact with the skins to enhance varietal character. Fermentation at cool temperatures is done to preserve aromatic character. Fresh and clean with crisp apple and ripe pear character, this vintage was fermented dry. Pair with seafood, poultry and mild cheese.
